Recipe – The Perfect Omelet

Over the past years, I have been making omelets when I have nothing else to eat. Their cheap and taste really good. I have also developed what I believe to be the perfect omelet recipe.
Ingredients
- 3 large eggs
- 1/4 cup lowfat milk
- 1/4 cup green bell peppers (red will also work)
- 1/4 cup diced onions
- 1 tbs butter or margarine
- 1 – 2 handfuls of grated cheese
- dash of salt
- dash of table pepper
- sour cream
- salsa
- avocado
Utensils
- medium sized mixing bowl
- small whisk
- 12″ cast iron skillet
- spatula
To start off, we want to take the butter and put it in the middle of the skillet. Now, turn the heat as hot as it will get. This is very important. Just let the butter melt in the middle, don’t touch it.
While the pan is getting hot, go ahead and cut up the bell pepper and onion. This will allow the skillet to warm up.
Crack all three eggs open in to the bowl. Whisk them until the mixture is smooth. Add the rest of the ingredients except for the cheese. Again, whisk them together, this time whisking them as fast as you can. What you are trying to do is make the mixture fluffy.
This is probably the time when you should grate the cheese if you need to. However, you should do it fast as the skillet is probably hot enough. If the butter looks like it is caramelizing then it is getting too hot.
Pour the egg mixture right in the middle of the skillet. This will push any extra butter to the edge of the pan coating it semi-evenly. Let sit for a few second then slowly shake the skillet to evenly disperse the eggs over the skillet. After a minute or two, the mixture should look almost cooked. Take the cheese and put it on one half of the omelet. Then flip the side with no cheese on it over the cheesed side. This is hard at first, but once you do it a few times it’s really easy.
Now, remove the omelet from the skillet and turn the fire off. The bottom of the omelet should be a dark golden brown, but not burned. Put the sour cream, salsa and avocado on the top and enjoy.
